For the Love of Gastronomy
   Part of the mystique of being a stout guy is a healthy love of food to go with the obsessive love of beer.
   When I was a kid, I used to beg my mom for one of those "101 Chemistry Experiments" type of kits, so that I could practice my future occupation, evil genius/mad scientist. My mom, being far wiser than my 8 or 30 year old self, refused for fear of coming back from school one day, only to find the better part of her home blown to bits by her wild haired and soot covered son.
   Instead, mom shunted that desire for mixing up boiling chemical soups with a free hand in the kitchen. The first experiments were, well, gastly. Some of them I still eat to this day, like Peanut Butter Sandwiches with Tabasco and a dash of Soy Sauce mixed into the fray. (yeah yeah.. read on for the better stuff) Nowadays, I'm one of the few guys I know of, who ends up cooking the meals when he visits his family!
   Aging tends to take its toll on the gourmet's waist. So after a diet rich on butter and beef, I've started attempting to cook healthy. The recipes aren't focused on any particular diet plan. There's no notion of "low-carb", high protein, beach food, etc. There is an emphasis on seafood, fresh vegetables, very few processed foodstuffs (too much food science tinkering) and, importantly, taking your calories where there's a huge impact in enjoyment. Virtually all the entrees are designed to be paired with a nice bitter salad and a light dressing.

Yogurt CheeseThis is an amazingly simple, tangy, tasty cheese that you can setup, walk away from and use with salads, breads, etc. Think a decent replacement for a log of goat cheese.
